This is the Lights-pastry of 2026!

It has now become a tradition for a new Lights pastry to be created ahead of each edition of Lights in Alingsås. For the third consecutive year, Alingsås Energi is collaborating with students from the Alströmer Upper Secondary School’s Restaurant Management Programme, specialising in bakery and pastry arts.

This year, eight students from Years 2 and 3 were given the assignment. Their creation is a Red Velvet cupcake with salted caramel cream and a cream cheese frosting shaped like a pink rose, inspired by this year’s theme, Stories of Love.

The Year 3 students developed the pastry, while the Year 2 students will bake and sell it during the event.

How did you come up with this year’s pastry?

“We were inspired by this year’s theme, Stories of Love. Red velvet was a perfect choice because the colour red is strongly associated with love. In addition, the frosting is shaped like a pink rose, a symbol of romance. The flavours complement each other beautifully. The smooth frosting combined with the salted caramel cream at the centre adds an extra dimension,” say the students.

Tell us, what is Red Velvet?

“It is a soft American-style cake with a reddish-brown colour and a mild cocoa flavour, typically topped with cream cheese frosting. The red colour is created when a small amount of vinegar is added to the cocoa batter, causing a chemical reaction. The vinegar does not affect the flavour,” explains teacher Ellen.

What experiences did you bring with you from last year?

“It was great fun to create last year’s pastry, and we were delighted by how well it was received. The film theme provided plenty of inspiration for the caramelised popcorn topping. This year, we have chosen to pipe a rose onto every cupcake instead, allowing us to explore new techniques. We hope this year’s pastry will be just as popular,” the students say.

The pastry will be available during:

  • The Lights in Alingsås Opening Ceremony on 2 October in Åmanska Park
  • At the café in Campus Alingsås (Utbildningens Hus)

Participating Students:

24RL: Kevin Blideskog Rankovic, Linnea Hult, Hanna Wilson
25RL: Joel Tengberg, Alicia Lundfall, Myra Svensson, Julia Blomgren, Irma Gardefors Ellholm
